Cake ingredients

  • 2 c self rising flour
  • ¾ c caster sugar
  • 1 tsp ground cinnamon
  • ¼ c milk
  • 1 stick butter, melted and cooled
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 large bananas, mashed

Frosting ingredients

  • ½ stick unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1 tsp vanilla extract
  • 1 to 2 c powdered sugar


  1. Preheat your oven to 390°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Combine flour and caster sugar in a bowl. Make a well in the center and stir in the cinnamon.
  3. Add milk, butter, eggs and vanilla to flour mixture. Using a large metal spoon, stir gently to combine.
  4. Add the banana and mix until just combined ensuring you do not over mix.
  5. Spoon the mixture into prepared muffin tin.
  6. Bake for 12 to 15 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  7. To make the frosting, cream the butter and cream cheese together until pale and fluffy. Add the vanilla.
  8. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and you have reached your desired consistency.
  9. Pipe the frosting onto the fully cooled cupcakes and decorate as desired.
