Cupcake recipe

Cake ingredients

  • ½ c cocoa powder
  • 1 c boiling water
  • 1 ⅓ c all purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 stick unsalted butter, softened
  • 1 c sugar
  • 2 large eggs
  • 2 tsp vanilla extract

Frosting ingredients

  • 2 to 3 c powdered sugar
  • 1 stick unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 to 2 tbs whipping cream
  • Green food coloring


  1. Preheat oven to 350°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Add the cocoa powder and boiling water in a bowl and stir until smooth. Allow it to cool to room temperature.
  3. In a separate bowl mix together the flour, baking powder and salt.
  4. Beat the butter and sugar together until light and fluffy.
  5. Add the eggs, one at a time, beating until smooth.
  6. Beat in the vanilla extract.
  7. Add the flour mixture and mix only until it is incorporated.
  8. Add the cooled cocoa mixture and stir until smooth.
  9. Spoon the mixture into the prepared muffin tins.
  10. Bake for 16 to 22 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  11. To make the frosting, beat together the sugar and butter on a low speed until fluffy.
  12. Add the vanilla and cream and continue beating. Depending on the consistency you desire, you may wish to add a little more cream or sugar.
  13. Add the desired amount of green food coloring.
  14. Pipe the frosting onto the fully cooled cupcakes in the shape of Christmas trees and decorate as desired.
