Cake ingredients

  • ¾ c all purpose flour
  • ¾ c cake flour
  • ½ tbs baking powder
  • ¼ tsp salt
  • 2 tsp ground cinnamon
  • 1 stick unsalted butter, softened
  • ¾ c sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ c milk
  • 2 tbs butter, melted
  • 2 tbs sugar
  • ½ tsp ground cinnamon

Frosting ingredients

  • ½ stick butter, softened
  • 4 oz cream cheese, softened
  • ¼ tsp vanilla extract
  • ½ tsp ground cinnamon
  • 2 to 3 c powdered sugar
  • 1 tbs milk


  1. Preheat your oven to 350°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Mix together both flours, baking powder, salt and cinnamon in a bowl and set aside.
  3. In a large bowl cream together the butter and sugar until light and fluffy.
  4. Add one egg at a time and beat for about a minute for each. Add the vanilla.
  5. Slowly add a third of the flour mix, alternating with additions of the milk, ending with the flour mix. Mix until just combined ensuring you do not over mix.
  6. Spoon the mixture into prepared muffin tin.
  7. Bake for 18 to 22 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  8. To make a crusty topping, mix the 2 tablespoons of sugar and ½ a teaspoon of cinnamon together.
  9. When the cupcakes are completely cooled brush melted butter on the tops and dip into the cinnamon sugar mixture.
  10. To make the frosting, cream the butter and cream cheese until light and fluffy.
  11. Mix in vanilla and cinnamon and add powdered sugar 1 cup at a time until all is incorporated.
  12. Depending on your desired consistency, add a few drops of milk if needed.
  13. Pipe the frosting onto the fully cooled, sugar crusted cupcakes and decorate as desired.
