Cake ingredients

  • 1 c all purpose flour
  • ¾ c self rising flour
  • 1 stick butter, softened
  • 1 ¼ c sugar
  • 2 large eggs
  • 2 ½ tbs fresh lime juice
  • 1 tbs lime zest
  • ¼ tsp green food coloring
  • ¾ c buttermilk

Frosting ingredients

  • 1 stick unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 ½ c powdered sugar
  • 1 tbs lime zest
  • ½ tsp vanilla extract


  1. Preheat your oven to 350°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Sift together both of the flours in a bowl and set aside.
  3. In a large bowl cream together the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating on low.
  5. Once the eggs are incorporated, add lime juice, zest and food coloring.
  6. Gradually add flour mixture in 3 additions, alternating with buttermilk in 2 additions, ending with the flour mixture. Do not over mix.
  7. Spoon the mixture into prepared muffin tin.
  8. Bake for 20 to 25 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  9. To make the frosting, cream the butter and cream cheese until well blended.
  10. Add all the remaining ingredients, beating until fluffy.
  11. You may choose to add more powdered sugar, depending on your desired consistency.
  12. Pipe the frosting onto the fully cooled cupcakes and decorate as desired.
