Cake ingredients

  • 1 stick unsalted butter, softened
  • 1 c sugar
  • 2 eggs, room temperature
  • 1 ½ limes, zest and juice
  • ¼ tsp vanilla extract
  • 2 tbs tequila
  • 1 ½ c all purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ c buttermilk
  • 1 to 2 extra tbs tequila

Frosting ingredients

  • 1 stick unsalted butter, softened
  • 3 c powdered sugar
  • 1 tbs lime juice
  • 2 tbs tequila
  • Pinch of salt


  1. Preheat oven to 325°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Beat the butter and sugar together until the mixture is pale and creamy.
  3. Add one egg at a time to the butter mixture and beat for about a minute for each.
  4. Add the lime zest, lime juice, vanilla extract and tequila. Mix until combined.
  5. In a separate bowl mix together the flour, baking powder and salt.
  6. Add about a third of the flour mix into the butter mix and beat in gently.
  7. Add about half the buttermilk and beat in gently until you have a smooth mixture.
  8. Repeat with the remaining flour mix and buttermilk ensuring to not over beat the mixture.
  9. Pour the mixture evenly among the prepared tins.
  10. Bake for 20 to 25 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  11. Allow cupcakes to cool for 5 to 10 minutes then brush the tops of the cupcakes with the extra 1 to 2 tablespoons of tequila.
  12. For the frosting, cream the butter until pale and fluffy.
  13. Add about half the powdered sugar slowly, beating well.
  14. Add the lime juice, tequila and salt mix until incorporated and fluffy.
  15. Continue to add powdered sugar to the mixture until you reach desired flavor and consistency.
  16. Pipe the frosting onto the fully cooled cupcakes and decorate as desired.
