Pineapple orange cupcakes are a gluten free citrus treat.

Cake ingredients

  • 1 c sugar
  • Zest of one orange and lemon
  • 1 ½ c gluten free all purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 stick unsalted butter, softened
  • 3 large eggs
  • ⅔ c buttermilk
  • 1 tbs pineapple juice
  • 1 tsp Limoncello
  • 1 tsp vanilla extract
  • ½ tsp orange extract
  • 3 tbs crushed pineapple, drained

Frosting ingredients

  • ½ stick unsalted butter, softened
  • 3 to 4 c powdered sugar
  • 8 oz cream cheese
  • 1 tsp Grand Marnier
  • 1 tsp vanilla extract
  • ½ tsp orange extract
  • 2 to 3 tbs pineapple juice


  1. Preheat your oven to 350°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Add the sugar and the zests together in a small bowl and work the zest into the sugar with your fingertips until all the sugar is coated. Let aside for 15 minutes to infuse.
  3. Add the flour, baking powder, soda and salt together and stir to combine.
  4. When the sugar is ready add it to the butter and cream together.
  5. Add the eggs one at a time. Add the buttermilk and flavorings.
  6. Gently mix in the flour until well incorporated.
  7. Fold in the crushed pineapple.
  8. Spoon the mixture into prepared muffin tin.
  9. Bake at 350 for 10 minutes and reduce oven temperature to 325. Bake about 14-18 or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  10. To make the frosting, cream the butter until pale and fluffy.
  11. Beat in the powdered sugar until incorporated and then gradually add the cream cheese. Mix well.
  12. Add in the flavorings. Whip just until everything is mixed in well and it is smooth.
  13. Pipe the frosting onto the fully cooled cupcakes and decorate as desired.
