Rum and coke cupcakes turn a traditional drink into a sweet treat.

Cake ingredients

  • 1 c sugar
  • 1 c all purpose flour
  • ¾ c Coca Cola
  • ¾ c mini marshmallows
  • 1 stick unsalted butter, softened
  • 1 egg
  • ½ c buttermilk
  • ½ tsp baking soda
  • 1 tsp vanilla extract

Frosting ingredients

  • 1 stick unsalted butter, softened
  • 1 tsp vanilla extract
  • 2 to 3 c powdered sugar
  • 1 tbs rum


  1. Preheat your oven to 350°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Combine the sugar and flour in a bowl and set aside.
  3. Add the cola, butter and marshmallows in a saucepan and bring to a foaming boil until the marshmallows have melted.
  4. Pour this mixture into the bowl with the flour/sugar and mix well.
  5. Add the egg, buttermilk, baking soda and vanilla, mixing well after each addition.
  6. Spoon the mixture into prepared muffin tin.
  7. Bake for 15 to 20 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  8. To make the frosting, cream together the butter and vanilla.
  9. Alternate adding powdered sugar and rum until desired consistency and flavor is reached.
  10. Pipe the frosting onto the fully cooled cupcakes and decorate as desired.
