Cake ingredients

  • 1 ½ c all purpose flour
  • ¾ c sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 stick unsalted butter, melted
  • 4 bananas, mashed
  • 2 large eggs
  • ½ tsp vanilla extract

Frosting ingredients

  • 1 stick unsalted butter, softened
  • 1 ¼ c powdered sugar
  • 1 tbs honey
  • ¼ tsp ground cinnamon
  • ¼ tsp salt


  1. Preheat your oven to 350°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Mix the flour, sugar, baking powder, baking soda and salt in a bowl.
  3. Make a well in the center of the dry ingredients and add the butter, mashed bananas, eggs and vanilla.
  4. Stir the ingredients until just combined, ensuring you do not over mix.
  5. Spoon the mixture into prepared muffin tin.
  6. Bake for 22 to 30 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  7. To make the frosting, beat the butter until it is pale and fluffy.
  8. Gradually add all the other ingredients and continue beating until smooth, about 4 to 5 minutes.
  9. Pipe the frosting onto the fully cooled cupcakes and decorate as desired.
