Cake ingredients

  • 1 stick unsalted butter, softened
  • ¾ c sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 ½ c all purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ c milk
  • 2 c frozen or fresh mixed berries

Frosting ingredients

  • 1 stick unsalted butter, softened
  • 3 c powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp matcha powder
  • 1 to 2 tsp milk


  1. Preheat your oven to 350°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs, one at a time and mix well. Stir in vanilla extract.
  4. Add half of the flour mix to the butter mix, followed by the milk, then the remaining flour. Mix until just combined. Do not over mix.
  5. Gently fold in the berries.
  6. Spoon the mixture into prepared muffin tin.
  7. Bake for 20 to 25 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  8. To make the frosting, cream the butter and powdered sugar together.
  9. Add vanilla extract and matcha, mixing until completely combined.
  10. Add milk to reach your desired consistency.
  11. Pipe the frosting onto the fully cooled cupcakes and decorate as desired.
