Cake ingredients

  • ¾ c self rising flour
  • ½ c all purpose flour
  • 1 stick unsalted butter, softened
  • 1 c sugar
  • 2 large eggs, room temperature
  • ½ c eggnog
  • ½ tsp vanilla extract

Frosting ingredients

  • 1 stick unsalted butter, softened
  • 2 to 3 c powdered sugar
  • ⅓ c whipping cream, room temperature
  • 2 tbs spiced rum
  • Pinch of salt


  1. Preheat your oven to 350°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Combine the flours in a bowl and set aside.
  3. Cream the butter and sugar together until pale and fluffy.
  4. Add one egg at a time to the butter mixture and beat for about a minute for each.
  5. Slowly add the flour mix, alternating with the eggnog, ending with the flour mixture. Mix until just combined ensuring you do not over mix.
  6. Spoon the mixture into prepared muffin tin.
  7. Bake for 20 to 25 minutes, or until a skewer inserted into the center comes out clean. Brush with the some extra maple syrup if you wish and then transfer to a wire rack to cool.
  8. To make the frosting, cream the butter until pale.
  9. Add about half of the powdered sugar and mix until incorporated.
  10. Add the whipping cream and spiced rum and mix until smooth.
  11. Add the pinch of salt and gradually add the remaining powdered sugar until you reach your desired consistency and taste.
  12. Pipe the frosting onto the fully cooled cupcakes and decorate as desired.
