Cake ingredients

  • 2 c self rising flour
  • ¾ c caster sugar
  • ¾ c milk
  • 1 stick unsalted butter, melted and cooled
  • 2 large eggs, beaten
  • 1 tsp vanilla extract

Frosting ingredients

  • 2 to 3 c powdered sugar
  • 1 stick unsalted butter
  • 1 tsp vanilla extract
  • 1 to 2 tbs whipping cream


  1. Preheat your oven to 390°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. Combine flour and caster sugar in a bowl and make a well in the center.
  3. Add milk, butter, eggs and vanilla to flour mixture.
  4. Using a large metal spoon, stir gently to combine.
  5. Spoon the mixture into prepared muffin tin.
  6. Bake for 12 to 15 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  7. To make the frosting, beat together the sugar and butter on a low speed until blended well.
  8. Increase the speed to medium and beat for an additional 3 minutes.
  9. Add the vanilla and cream and continue beating for 1 minute more. Depending on the consistency you desire, you may wish to add a little more cream or sugar.
  10. Pipe the frosting onto the fully cooled cupcakes and decorate as desired.
