Cake ingredients

  • 2 c all purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 8 oz cream cheese
  • 1 stick butter, softened
  • 1 ¼ c sugar
  • 2 tbs orange zest
  • 1 tsp vanilla extract
  • 4 eggs
  • ¼ c vegetable oil
  • ¼ c milk

Frosting ingredients

  • ½ stick butter, softened
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 3 c powdered sugar
  • 2 to 3 tbs lime juice


  1. Preheat your oven to 325°F. Grease a 12 capacity muffin tin or line the holes with paper cases.
  2. In a small bowl, combine the flour, baking powder and salt and set aside.
  3. Mix together the flour, baking soda and salt bowl and set aside.
  4. In a large bowl cream together the cream cheese, butter, sugar, orange zest and vanilla extract until light and fluffy.
  5. Add eggs to the sugar mixture one at a time, beating well after each addition.
  6. Beat in the oil.
  7. Gradually add flour mixture in 3 additions, alternating with milk in 2 additions, ending with the flour mixture. Do not over beat.
  8. Spoon the mixture into prepared muffin tin.
  9. Bake for 22 to 30 minutes, or until a skewer inserted into the center comes out clean. Transfer to a wire rack to cool.
  10. To make the frosting, beat the butter, vanilla extract and zest until fluffy.
  11. Gradually add powdered sugar, alternating with the lime juice. Add the lime juice until you reach your desired consistency.
  12. Pipe the frosting onto the fully cooled cupcakes and decorate as desired.
